Zucchini with Mint

Peel and slice zucchini into rounds.

Slice onions thinly, rub in salt, then saute in oil till wilt.

Add zucchini and leave over very low flame until the zucchini reabsorb their own juice,

After about 20 minutes sprinkle with mint and place in the serving dish.
