Vegetarian Shepherd’s Pie


المقادير
4 peeled and cubed potatoes  
1-2 tbsp. soy sauce  
1 tbsp. lemon juice  
2 tbsp. vegetable oil  
1 chopped onion  
1/4 tsp. thyme  
1/2 tsp. ground coriander  
1/2 c. walnuts  
1 shredded tofu cake  
3 tbsp. butter  
1/2 c. milk  
Salt and black pepper to taste

Toast walnuts by baking it in heated oven at 350°F for 5 minutes in pie pan
Fry onion in the oil with the thyme, coriander, and pepper in preheated oil for 8 minutes
Chop and add to the onion mixture together with shredded tofu and mix well
Parboil potato cubes in salted water for 10 m. and then remove potatoes and keep the water to be used later
Mash boiled potatoes with butter, salt and milk to be used for preparing the potato layer
Wrap the tofu with plastic wrap and keep the tofu cake in the freezer for 24 hours and then remove, squeeze and grate
Arrange in a cooking pan and spread a layer of mashed potato on the surface
Bake the pie for 30 minutes in preheated oven at 350°F and then serve
