Vegetables in Peanut Sauce


المقادير
1/4 c. unsalted smooth peanut  
2 chopped jalapeño peppers,  
2 c. shredded white cabbage  
1 c. sliced fresh okra  
1/2 c. chopped red bell pepper  
2 sliced carrots  
1/2 kg seeded, and pureed tomatoes  
2 c. vegetable stock  
1 tbsp. vegetable oil  
2 chopped onion  
3 cloves garlic  
3 1/2 c. water  
1 tsp. thyme  
Dash of allspice  
1 tsp. salt  
طريقه التحضير
Sauté oil and garlic for 2 minutes in preheated oil and then pour the peanut sauce and tomato over it and let to simmer for 2 m.
Bring half of the vegetable stock to boil in another pan and let to simmer for 5 m.
Add the water in a large pan together with thyme, jalapeños, allspice, salt and let it to simmer on low heat for 30 m.
In another saucepan bring the rest of the stock to boil and then place the vegetables init and leave it to simmer on low heat for 15 minutes
Remove vegetables from the saucepan and arrange in a serving dish and pour the peanut sauce mixture on the top and serve hot
