Vegetable Stew


المقادير
1 medium onion, chopped  
1 tbsp. grated gingerroot  
3 tsp. tomato paste  
1 tbsp. canola oil  
1 peeled and chopped sweet potato,  
1 chopped carrot  
1/2 red bell pepper, cored, seeded, and chopped  
1/2 c. green beans with removing ends  
2 c. vegetable stock  
Turmeric, paprika, cumin  
2 minced garlic cloves

Sauté onion in preheated oil in a large kettle till tender and then add garlic, ginger root, paprika, cumin, and tomato paste and stir well
Put sweet potato, carrot, red bell pepper, and green beans and mix the ingredients well for 2 minutes and then pour the stock over the mixture and bring to boil
Reduce heat and let the ingredients covered to simmer for 25 m. and then serve hot.
You can use any other kind or vegetables such as cabbage, spinach, or any other kind of vegetables.
