Tortillas with Chicken


Enchiladas or Tortillas with Chicken is a delicious Mexican meal that can be served in various ways with different flavorful filling including: meat, cheese, vegetables, or any combination of these ingredients. For a better taste, you can serve it with any spicy sauce or tomato sauce.
المقادير
4 chicken thighs cut into bite-size joints  
10 corn tortillas  
3/4 cup sour cream  
1tsp ground coriander  
1 Chopped onion  
3 c. tomato purée  
2 crushed garlic cloves  
4 tbsp. chili powder  
1/4 tsp. oregano  
Salt, ground cumin  
2 tsp. vegetable oil  
1/2 chopped cilantro leaves  
1 c. grated cheddar cheese  
1 avocado  
Coconut oil

In a medium frying pan, heat oil, add onion and stir till become transparent
Add chili powder, cumin, oregano, and salt and stir gradually
Add chicken pieces and stir well to cover it completely with sauce.
Add tomato and garlic over the chicken pieces and let to simmer on medium fire till being cooked
Remove chicken pieces from the sauce and press on it to strain it from sauce
Place chickens in another pan and place in the refrigerator for 5 minutes
Cover the pan and let on medium fire for 30 m.
For stuffing, grease a medium sized baking pan with Enchilada sauce,
Brush the sides of the tortilla with coconut oil, place on two baking sheets till tender
Put 1/4 cup of the chicken filling in the center and roll tightly and then place it in the baking dish.
Repeat the process with the rest of the filling and tortillas and then sprinkle cheddar cheese on the surface of the baking pan
Cover with foil and bake on low-medium heat for 30 minutes and then serve hot garnished with sour cream and avocado
