Sunshine Salad with Vinaigrette Dressing


Australian cooks prepare salads with a combination of fruits and vegetables. This tangy treat adds a delightful taste to your day!

Salad:  
1 banana  
1 11-oz. can mandarin orange segments  
1 red onion  
2 tsp. lemon juice  
1 small cucumber  
1 small head of lettuce  
Vinaigrette dressing:  
1/2 tsp. dry mustard  
pinch of pepper  
2 tbsp. wine vinegar  
1 tsp. salt  
7 tbsp. olive oil or vegetable oil

Drain the orange segments.
Slice banana and sprinkle it with lemon juice to prevent it from turning brown.
Peel and slice the cucumber and red onion into thin pieces.
Wash the small head of lettuce, then pat dry on a paper towel.
Tear lettuce into mouthful pieces.
Place lettuce in a salad serving bowl.
Add cucumber, banana, mandarin orange segments, and red onion to lettuce.
Place a lid to cover bowl and place in refrigerator to chill.
Now start preparing the dressing by combining the vinaigrette ingredients in a jar with a tight-fitting lid. Lock lid and shake thoroughly for 30 seconds until well blended.
Before serving, mix salad with vinaigrette dressing.
