Stuffed Sweet Peppers (meatless)
There are several types of pepper but the most preferable one for stuffing is the sweet pepper and you should taste it to determine sweetness.

1 kg green sweet peppers |

For stuffing: 1/2 cup oil, 1 cup rice |
|
 |
3-4 peeled and diced ripe tomatoes, |
|
 |
1/2 cup finely chopped parsley leaves, |
|
 |
1/2 cup finely chopped dill leaves, |
|
 |
salt and pepper |
|
 |
1 grated onions, |
|

Blanch peppers, and remove stems and seeds. |
|
 |
Mix all the stuffing ingredients and fill peppers loosely. |
|
 |
Arrange peppers in pot upright and half-cover with salted water |
|
 |
Cook over very low flame for 30 minutes. |
