Stuffed Chicken, Boiled and Fried

المقادير
2 small chickens,  
1 teaspoon cinnamon or nutmeg powder  
giblets, cooking oil, salt and pepper  
1/2 cup rice, 3-5 grains mastic  
I onion, quartered

Dice giblets and mix with rice, cinnamon or nutmeg, and seasoning
Stuff this filling into the chickens and truss or sew up openings.
Boil 4 cups of water with onion and seasoning, then submerge the chicken into with this water and cook for about half an hour.
Remove from pot and keep warm.
Heat oil, stir in mastic grains for a few seconds
Add chicken, cover tightly and turn off fire.
Allow chicken to absorb fragrance, 2-3 minutes, then uncover and fry chicken until nicely brown.
Cut up into neat joints, arrange stuffing in middle of serving dish and surround with chicken joints.
You can warm the broth and use it for moistening stuffing.
