Stuffed Artichokes

12-15 artichoke hearts |
|
 |
2 eggs, 1 potato, cooking fat |
|
 |
1/2 kg lean beef, ground |
|
 |
dash of paprika, salt and pepper |

2 tablespoons tomato paste |
|
 |
5 crushed garlic cloves, |
|
 |
1 finely chopped onion, |
|
 |
2 tablespoons finely chopped parsley, |
|
 |
2 tablespoons lemon juice, 1 teaspoon tabil |

Heat fat and fry half the amount of crushed garlic, stirring constantly to prevent its sticking to bottom of pan, |

stir in the tomato paste and seasoning diluted in two cups of water and allow to simmer for 5 minutes. |

Put ground beef in pot with half cup of water over high heat, stirring constantly. |

Add onion and cook until onion wilts When water evaporates. |

Add parsley, remaining garlic, tabil and seasoning and cook for 3 minutes longer and then let to cool. |

Boil potato, drain and mash, |
|
 |
Add Beaten eggs and potatoes to meat and mix them thoroughly. |
|
 |
Stuff artichoke hearts with the above mixture, arrange tidily in pot, cover with tomato sauce and cook until tender. |
