Stewed Eggplant

1 kg large eggplant |

 |
1 kg ripe tomatoes |
|
 |
2 onions |
|
 |
cooking oil, salt and pepper |
|
 |
3-5 garlice cloves ( optional) |

 |
Peel and cut eggplant into large cubes. |

 |
Peel and slice onions thick. |
|
 |
Peel and quarter tomatoes. |
|
 |
Fry onion and eggplant in the oil lightly , drain, and place in cooking pot. |
|
 |
Add tomatoes and seasoning, and cook over very slow flame for about 1 hour. |
