Stewed White Beans
This Turkish meal can be served either hot or cold.

 |
2 cups dried haricot beans |
|
 |
tablespoons tomato paste |
|
 |
1 cup finely sliced celery, stalk and leaves |
|
 |
2 chopped onions, |
|
 |
2 crushed garlic cloves, |
|
 |
2 diced carrots, |
|
 |
1/2 cup finely chopped parsley, |
|
 |
1 tablespoon lemon juice |
|
 |
1/2 teaspoon sugar |
|
 |
salt and pepper, olive oil |

 |
Soak beans for at least 2 hours to soften its outer skin and allow absorbing more of the sauce while cooking. |

Drain, add fresh tap water and boil for 5 minutes. |

 |
Remove from fire and let to cool for 1-2 hours. |

Heat oil and fry onions until they wilt, |
|
 |
Add garlic, carrots and celery and fry 3-5 minutes, stirring constantly. |
|
 |
Return beans to pot and boil for 30 minutes longer. |
|
 |
Dilute tomato paste in water, add sugar, salt, and pepper, and toss into pot together with fried vegetables. |

 |
Cook until tender, remove from fire, add lemon juice and parsley, and, adjust seasoning. |
