Spinach with Yogurt Sauce

1/2 cup yogurt |

1 kg spinach |
|
 |
2 tablespoons olive oil |
|
 |
2 chopped onions, |
|
 |
6 crushed garlic cloves, |

 |
salt and pepper |

 |
Parboil spinach over slow fire till wilt. |

Drain in colander and press to extract all moisture. |

Fry chopped onions in heated olive oil to a pale brown color. |

 |
Add spinach and seasoning and cook for 10 minutes. |
|
 |
Remove onto serving bowl and blend yogurt with garlic and stir into spinach and serve cold. |
