Spinach Turnovers

1 teaspoon active dry yeast |
|

1/2 teaspoon salt |
|
 |
2 tablespoons olive oil |
|
 |
3 cups best quality flour |
|
 |
1/2 teaspoon sugar |
|
 |
1/2 cup yogurt |
|
 |
1 teaspoon baking soda |
|
 |
The filling: 1/2 kg spinach |
|
 |
2 tablespoons grated parsley 3 onions, |
|
 |
2 tablespoons chopped walnuts, |
|
 |
salt and pepper, 1 tablespoon sumac |
|
 |
3 tablespoons lemon juice |
|

 |
Mix yeast and sugar in 1/2 cup warm water and let to make bubbles. |
|

Sift baking soda, flour, salt, then add yeast and stand for 15-20 minutes. |

Knead adding oil and yogurt alternately until dough is smooth and leaves sides of pot clean. Cover and keep in warm place for at least 1 hour. |

Rinse spinach leaves, sprinkle with salt and rub to extract juice, shake off moisture, then finely chop. |

Mix sumac, parsley, onion, olive oil , lemon juice, nuts and seasoning thoroughly and add to the spinach . |

Roll out dough thinly on a floured surface, and cut into small balls. |
|
 |
Put a spoonful of spinach in center of each round, wet the dough edges with water and lift the pastry on three sides and press together to form pyramid. |

 |
Place in greased oven tray after brushing with oil and bake in preheated moderate oven until dough is crisp and golden. |
