Spinach Salad


المقادير
1/2 tsp. garlic, finely chopped  
1 tbsp. sesame seeds  
1 lb. fresh spinach  
1/2 c. water  
1 tbsp. sesame oil  
2 tsp. soy sauce  
طريقه التحضير
Toast sesame seeds (without oil) in a saucepan for 1 to 3 minutes, stirring from time to time. Remove sesame seeds from saucepan when golden. Set aside.
Wash the spinach thoroughly and pat dry over paper towels.
Remove the stems and inedible pits and yellow leaves.
Parboil water in a saucepan over high heat.
Place spinach in boiling water. Place a lid to cover.
Lower the heat to medium-high and simmer for 3 to 5 minutes.
When tender, remove from heat and transfer into a colander to drain well. Set aside to cool, then press with your hands carefully and gently to discard and excess water.
Tear spinach into 2-inch lengths and transfer into a bowl.
Stir in the rest of ingredients and serve.
