Shredded Chicken-Cabbage Salad


In Vietnam, salad is served as a starter on special occasions.
المقادير
fresh coriander  
juice of 1 lime  
1/2 tsp. salt  
1/8 tsp. cayenne pepper  
2 whole chicken breasts  
1/2 small head cabbage  
1/4 c. roasted peanuts, chopped

Skin and rinse the whole chicken breasts under cool running water. Pat dry over paper towels.
Put chicken in a large saucepan. Pour enough amount of water to cover then parboil over medium heat.
Reduce the heat, place a lid to cover, and cook chicken for 30 minutes. When cooked, remove from flame.
Transfer chicken onto a plate. Allow to cool for 15 minutes. Slice into small pieces lengthwise.
Place sliced chicken pieces in a bowl.
Shred the small head cabbage. Add to chicken bowl.
In a separate bowl, combine lime juice, salt, and cayenne pepper. Mix well.
Pour cayenne pepper mixture over chicken and cabbage. Mix until well blended.
Before serving, transfer chicken-cabbage salad on a salad plate.
Sprinkle with peanuts and coriander. Serve.
