Skin and rinse the whole chicken breasts under cool running water. Pat dry over paper towels. |

Put chicken in a large saucepan. Pour enough amount of water to cover then parboil over medium heat. |

Reduce the heat, place a lid to cover, and cook chicken for 30 minutes. When cooked, remove from flame. |

Transfer chicken onto a plate. Allow to cool for 15 minutes. Slice into small pieces lengthwise. |

Place sliced chicken pieces in a bowl. |

Shred the small head cabbage. Add to chicken bowl. |
|
 |
In a separate bowl, combine lime juice, salt, and cayenne pepper. Mix well. |

Pour cayenne pepper mixture over chicken and cabbage. Mix until well blended. |

 |
Before serving, transfer chicken-cabbage salad on a salad plate. |
|
 |
Sprinkle with peanuts and coriander. Serve. |
