This refreshing salad is widely prepared in most parts of Spain.

Peel and dice the 1 lb. medium potatoes. Bring to a boil. |

Peel, dice, and cook the carrots. |

Cut the cooked green beans into pieces. |
|

Mince the clove garlic. |
|
 |
Make a mixture of all the vegetables (except red bell pepper). Place in a salad serving bowl. |

Add salt and pepper to season. |

Blend the mayonnaise with the garlic. Then spread onto the vegetable mixture. |

Sprinkle with pepper strips to decorate. Serve. |
