Potato Noodles


المقادير
4 medium baking potatoes  
4 tbsp. butter  
1 egg  
2 c. water  
1 c. flour  
2 tbsp. farina  
2 tbsp. chopped parsley  
1/2 tsp. salt  
طريقه التحضير
Wash potatoes and parboil in hot water for 15 minutes
Drain and put in refrigerator for 5 minutes and then peel
Use potato ricer to pure the cold potato and then put all of it in a small bowl
Add the egg, flour, farina and salt to the potato and mix well with floured hands till forming hard dough
Roll the dough on a floured surface and then divide into small slices and then roll to make it finger-shaped
Fry the potato noodles or fingers in the preheated butter till brown and then remove into a flat serving dish and garnish with chopped parsley or lemon slices and serve hot
