Wash potatoes and parboil in hot water for 15 minutes |

Drain and put in refrigerator for 5 minutes and then peel |

Use potato ricer to pure the cold potato and then put all of it in a small bowl |

Add the egg, flour, farina and salt to the potato and mix well with floured hands till forming hard dough |

Roll the dough on a floured surface and then divide into small slices and then roll to make it finger-shaped |

Fry the potato noodles or fingers in the preheated butter till brown and then remove into a flat serving dish and garnish with chopped parsley or lemon slices and serve hot |
