Mossaka Eggplant


المقادير
1/2 kg savory minced beef  
1 kg fried eggplant  
2 cups tomato juice  
salt, pepper, and spices  
طريقه التحضير
Mix 1/2 cup of tomato juice with savory minced beef and cook over slow flame for 7-10 minutes.
Line bottom of oven pan with one layer of eggplant slices,
spread the minced beef on top, and cover with the remaining eggplant.
Make several deep dents with the tip of a knife in the eggplant slices.
Season the remaining tomato juice and pour over the eggplant and bake in center of moderate oven
After about 30-40 minutes it would be ready to be served.
