Mixed Vegetables Casserole

1/4 kg okra with peeled ridges |

2-3 peeled and diced potatoes, |

1 brown peeled and diced round eggplant, |

5 peeled pearl onions, |

 |
1 chopped hot chili pepper, |

 |
1/4 kg string beans |
|
 |
1/2 kg lamb or beef |
|
 |
1 cup shelled peas |
|
 |
1 teaspoon mint powder |
|
 |
cooking fat, salt and pepper |

 |
Cut meat into bite-sized cubes, fry meat in cooking oil until the juice is reabsorbed, then remove from pot and place in casserole dish. |

Toss all the vegetables except the hot pepper into the remaining cooking oil and saute. |

Add hot pepper, mint powder, and seasoning to meat and cover with water. |

 |
Cook over slow fire for about 1 1/2 to 2 hours. |
