Mashed Zucchini Salad

To prepare 8 1/4-cup servings of this salad, you need:  
1 clove garlic, chopped  
1/4 c. feta cheese, finely chopped  
1/2 tsp. caraway seeds  
1/2 tsp. ground coriander  
1 1/4 lb. zucchini  
1 tbsp. fresh lemon juice  
1/2 tsp. harissa  
1 tbsp. extra-virgin olive oil  
1/2 tsp. salt

Chop the zucchini into small slices.
Place slices in a large saucepan.
Add enough water to cover zucchini. Parboil and simmer for 20 minutes.
When tender, remove from heat and drain using a colander.
Do not remove from the colander. Use a fork to pound zucchini and drain to discard excess water.
In a separate bowl, make a mixture of zucchini, lemon juice, olive oil, salt, caraway seeds, coriander, harissa, and garlic in a bowl.
Whisk mixture well.
Garnish with a sprinkle of feta cheese. Serve.
Try serving this salad dish with pita bread.
