Lentil Salad


This tangy salad is a favorite dish for Ethiopian Christians.
المقادير
1 1/2 c. dried lentils  
5 c. water  
6 tbsp. peanut oil or olive oil  
1 chopped onion  
2 tbsp. vinegar  
1/2 tsp. red pepper flakes  
salt and pepper to season  
3 cloves garlic, peeled and crushed  
طريقه التحضير
Place lentils in a bowl to rinse well.
Transfer into a strainer and place in a Dutch oven.
Add 5 c. of water to lentils and place on medium heat to parboil.
Reduce heat and cook for 45 minutes.
When lentils are slightly tender, remove from fire. Strain with a colander.
Place the lentils, salt, and pepper, onion, vinegar, oil, garlic, and red pepper flakes in a bowl.
Blend well a spoon. Set aside for 1 hour, stirring from time to time.
