Lentil Salad
This tangy salad is a favorite dish for Ethiopian Christians.

 |
1 1/2 c. dried lentils |
|
 |
5 c. water |
|
 |
6 tbsp. peanut oil or olive oil |
|
 |
1 chopped onion |
|
 |
2 tbsp. vinegar |
|
 |
1/2 tsp. red pepper flakes |
|
 |
salt and pepper to season |
|
 |
3 cloves garlic, peeled and crushed |

 |
Place lentils in a bowl to rinse well. |

Transfer into a strainer and place in a Dutch oven. |

Add 5 c. of water to lentils and place on medium heat to parboil. |

 |
Reduce heat and cook for 45 minutes. |

When lentils are slightly tender, remove from fire. Strain with a colander. |
|
 |
Place the lentils, salt, and pepper, onion, vinegar, oil, garlic, and red pepper flakes in a bowl. |

Blend well a spoon. Set aside for 1 hour, stirring from time to time. |
