Eggplant with Onion and Tomatoes
Eggplant with onion and Tomato is a famous Turkish meal that is preferred by people allover the world. the Turkish name or the meal means “The Imam Swooned,” which highlights the remarkable reaction of the imam or saint when he tasted this delicious taste.

2 medium eggplants |

 |
4 peeled and chopped tomatoes (1/2kg) |

1/2 c. olive oil |
|
 |
1/4 c. water |
|
 |
1 chopped onion |
|
 |
6 minced garlic cloves |
|
 |
1/2 c. chopped parsley |
|
 |
Chopped dill, chopped basil to taste |

 |
1 sliced lemon |
|
 |
1 tsp. salt |

 |
Mix onion with oil, salt, tomatoes, garlic, parsley, dill, and basil and stir well. |

Rinse the eggplant and slice it half lengthwise |

 |
Put the eggplant slices in deep roasting pan and pour the above mixture over it. |

Add olive oil mixed with water on the eggplant and the sauce and put in preheated oven till soft. |

Remove from oven, let to cool and then arrange on a flat serving dish and spoon it with the sauce and garnish with lemon slices |
