Cooscoos with Dates


المقادير
3 cups of cooscoos  
1/2 kg mutton  
1 tablespoon harissa  
3-4 carrots  
dash of hot chili, salt and pepper  
5-7 garlic cloves, crushed  
1/2 kg dates  
1-2 turnips  
طريقه التحضير
Peel and dice carrots and turnips
Cut meat into small cubes and place in cooking pot with peeled and diced carrots and turnips and boil in salted water.
When meat is nearly cooked, sprinkle water over cooscoos, place in steamer over boiling meat for 5-7 minutes.
Uncover pot, sprinkle lightly with water and with fork break lumps of cooscoos.
Remove stones from dates, chop coarsely, add to cooscoos and return over boiling meat for further cooking.
Remove both cooscoos and meat from fire when are well cooked, and keep separate.
Boil garlic, harissa and chili in a ladleful of stock until tender.
Serve cooscoos, meat and sauce separately.
