Cooscoos with Chicken

1/2 kg cooscoos |

 |
1 small chicken |
|
 |
cooking oil, salt and pepper |
|
 |
2 thinly sliced onions, |
|
 |
few grains mastic |
|

 |
Bring onions, mastic and seasoning to the boil, |
|
 |
Cut chicken into neat joints, then add the above mixture and cook 10-15 minutes |

When the broth of the chicken boils, sprinkle cooscus with water and place in perforated steamer over broth. |

Uncover once or twice and break up lumps with fork, sprinkling again with cold water. |

When cooscus is cooked, remove onto deep bowl, keeping warm. |

 |
Remove chicken joints and fry in oil. |
|
 |
Mash onion in broth, thicken, adjust seasoning and serve separately. |
