Circassian-Style Chicken


This meal is Considered the piece de resistance in any banquet.
المقادير
2 chicken, about 1 kg each  
12 crushed garlic cloves  
1 teaspoon coriander powder  
2 coarsely chopped onions  
few grains of mastic  
few crushed bay leaves  
2 loaves stale bread  
1 cup of crushed hazel nuts  
2 cups of crushed walnuts  
salt and pepper, 2 tablespoons cooking oil

Heat cooking oil, add mastic, stir, cover and remove from fire for a while to let the mastic melt and perfume pot.
Add chicken, lightly fry, then
add onions and water to cover and boil until chicken is tender.
Remove chicken from pot, bone and cut into neat pieces and keep warm.
Sprinkle water on bread to soften, then squeeze to remove moisture.Crumble.
Mix garlic, coriander, seasoning to a smooth consistency, saute for 3-5 minutes
Mash onions in stock and replace over fire, then toss the above mixture onto the boiling stock together with nuts and crumbled bread.
Adjust seasoning, and leave on slow fire, stirring constantly until sauce becomes like thin custard.
Add chicken pieces to sauce and allow to boil.
After boiling for a while it would be ready to be served.
