Chinese Dumplings


المقادير
1 package dumpling wrappers  
Cabbage  
1 tsp. salt  
1 c. chopped leeks  
Water  
Cornstarch  
1/2kg lean ground pork  
Minced ginger  
Crushed garlic  
1 tbsp. soy sauce  
2 tbsp. Chinese black vinegar

Coat the cabbage with salt and set aside for 15 minutes and then strain well and put in a large bowl
Mix pork with leeks, ginger, garlic, soy sauce, and cornstarch well and use to fill the cabbage
Put a tsp of the mixture in the center of the dumpling, dampen your finger and wet inside the wrapper, then fold the paper to be like a half-circle and gather the edges together to prevent the filling from leaking and repeat the process with the remaining dumplings
Bring a deep cooking pan, fill it to half with water and bring it to boil
Put some of the dumplings in the water and leave them till the water boil again, add more water, then leave to boil again and add also some water and when it boils for the third time transfer the dumplings from the pan into a serving dish and put the remaining dumplings
Mix the soy sauce and black vinegar and serve as spicy sauce with the hot stuffed dumplings
