Chicken with Lemon Sauce


المقادير
2 medium-sized chickens  
3 sliced onions  
3 tablespoons lemon juice  
1/2 cup seeded black olives  
1 tsp chopped coriander leaves  
15 diagonally halved garlic cloves  
Chopped parsley leaves  
Salt and pepper, dash of saffron, cooking oil

Cut chicken into neat joints, heat cooking oil, fry lightly, and then set aside.
Place in cooking pot onions, garlic, coriander and parsley, top with dash of saffron and leave over very slow fire until they wilt.
Add chicken joints with their cooking oil, seasoning and 1 cup of hot water, cover and allow cooking over slow fire.
Stir from time to time and when ready, remove chicken joints onto platter.
Mash vegetables well, add lemon juice and olives
Stir and return to fire to bubble for 2-3 minutes.
Drain the chicken pieces with the above mixture and it would be ready to serve immediately.
