Chicken and Potato Salad
Chicken and Potato Salad is a preferable Brazilian dish that is always cooked using hearts of palm to give it the creamy look and delicious taste. It is easy to prepare it without using the hearts of palm.

1 Ib. boneless, skinless chicken breasts |

4 slices of lean cooked ham cut into thin strips |

 |
3 medium potatoes |
|
 |
1/2 c. fresh or frozen and thawed green peas |

 |
1 green apple |
|
 |
1 tsp. salt |
|
 |
1/2 tsp. pepper |
|
 |
2 large carrots |
|
 |
1 c. canned, drained and finely chopped hearts of palm |
|
 |
1/2 c. regular mayonnaise |
|
 |
2 tbsp. olive oil |
|
 |
Vegetable oil for frying |

Cut the green apple into bite-sized pieces, cut the carrots coarsely. |

Wash the chicken pieces, pat dry, and cut into small pieces or thin sticks. |

Cook the chicken in preheated oil on a medium-high heat with salt and pepper for 10 minutes. |

Combine the chicken with ham, peas, carrot, apple in a large saucepan and hearts of palm and mayonnaise. |

 |
In a large frying pan, pour suitable amount of vegetable oil and add the pealed and sliced potato. |

Pour the mixture of chicken and vegetables over the potato and heat to 350˚F for about half an hour. |
|
 |
Serve hot and decorate the flat serving dish with parsley or any thing you like. |
