Chicken With Peanut Sauce


Favorite dish in Zimbabwe usually served in special occasions for its high price.

2 boneless Chicken breasts  
6 tbsp. creamy peanut butter  
1 large seeded and chopped tomato  
1/2 kg. fresh spinach  
1chopped onions  
1 large chopped and seeded green bell pepper  
2 minced garlic cloves,  
Salt, black pepper, red pepper flakes  
1 tbsp. canola oil  
2 c. water

Fry oil in a kettle in warm oil over medium heat for 5 minutes.
Add red pepper flakes, green pepper, garlic, salt, and black pepper and stir well.
Skin the chicken and cut them into small joints and cook for 10 minutes till brown in the previous mixture
Pour water and tomato over the mixture and lower the heat and leave it to simmer for 10 m.
Take 2 tbsp of the chicken sauce and mix it with the peanut butter in another bowl. Add half or the mixture to the chicken pot and leave it for 30 m.
While waiting for the chicken to be ready, add the washed and pat dry spinach in a medium saucepan filled with boiling water and leave on fire till tender.
Drain and rinse the spinach and add the peanut butter to it.
Put the chicken in a serving dish together with the greens.
