Bulgur Salad


Bulgur Salad or Tabuleh as it is known in Lebanon and Syria was usually prepared in this way and it was accustomed to eat tabuli by holding the lettuce leaf or baby raw vine leaf with thumb, index, and middle fingers and scoop some tabuli into the leaf without using any cutlery.
المقادير
4 cucumbers  
3 spring onions  
3 firm tomatoes  
1 cup finely ground bulgur  
Salt and mixed spices  
1/2 cup mint leaves  
3 tablespoons lemon juice  
lettuce or raw vine leaves  
1/2 cup parsley leaves  
3 tablespoons olive oil

Dice all the vegetables, except the lettuce and vine leaves.
Prepare bulgur by submerging it with water in a metal container and rub it till the impurities float on the surface, while the small stones will sink to the bottom.
Repeat rinsing it till water remains clear, then soak for 2-3 hours till tender then drain well.
Put oil, lemon juice, and salt in bottom of salad bowl and pour the bulgur and vegetables over it and toss well till cooked.
Use lettuce leaf or baby raw vine leaf to hold this mixture with to eat
