Bulgur Salad


Bulgur, which is a popular ingredient in the Lebanese cuisine, adds a very hearty taste to this recipe.
المقادير
2 c. bulgur  
3 tbsp. fresh mint, or 1 tbsp. dried mint  
1/2 c. olive oil  
1 c scallions  
1 onion  
4 large tomatoes  
2 small cucumbers  
6 tbsp. fresh parsley  
6 tbsp juice of lemon  
1 tsp. salt  
1/4 tsp. pepper  
طريقه التحضير
Peel and chop the onion and cucumbers into tiny pieces.
Chop the large tomatoes
Chop the scallions into tiny pieces.
Chop the fresh parsley.
Place each of the chopped ingredients in a separate bowl.
Rinse bulgur under cold water using a colander.
Place the colander with bulgur over a bowl and allow to drain from excess water for 60 minutes.
Mix bulgur with all rest of ingredients in a large serving bowl.
Place in a refrigerator to chill and serve cool.
