Bulgur Salad
Bulgur, which is a popular ingredient in the Lebanese cuisine, adds a very hearty taste to this recipe.

2 c. bulgur |

 |
3 tbsp. fresh mint, or 1 tbsp. dried mint |
|
 |
1/2 c. olive oil |
|
 |
1 c scallions |
|
 |
1 onion |
|
 |
4 large tomatoes |
|
 |
2 small cucumbers |
|
 |
6 tbsp. fresh parsley |
|
 |
6 tbsp juice of lemon |
|
 |
1 tsp. salt |
|
 |
1/4 tsp. pepper |
|

 |
Peel and chop the onion and cucumbers into tiny pieces. |

 |
Chop the large tomatoes |
|
 |
Chop the scallions into tiny pieces. |
|
 |
Chop the fresh parsley. |
|
 |
Place each of the chopped ingredients in a separate bowl. |

 |
Rinse bulgur under cold water using a colander. |
|
 |
Place the colander with bulgur over a bowl and allow to drain from excess water for 60 minutes. |
|
 |
Mix bulgur with all rest of ingredients in a large serving bowl. |
|
 |
Place in a refrigerator to chill and serve cool. |
