Braised Chicken

8 chicken thighs or legs |

1/2 small chopped onion |
|
 |
2 tbsp. fish sauce |
|
 |
1 tbsp. finely chopped fresh ginger |
|

1/4 tsp. salt |
|
 |
1/4 tsp. pepper |
|
 |
2 tbsp. vegetable oil |
|
 |
2 c. water |
|
 |
1 tsp. sugar |
|

 |
Mix the ginger, salt, and pepper in a small bowl. |

Skin the chicken pieces and rub mixture into it and cover for half an hour in the room temperature. |

Mash onion in a preheated oil uncovered till tender |

Add chicken, water, sugar and fish sauce. |
|
 |
Cover the skillet and leave the chicken for 45 minutes on a low fire to simmer, and then serve hot with rice. |
