Bisignano Spinach

1/2kg fresh chopped drained and cooked spinach |

1/2 c. spaghetti sauce |
|
|
1 c. sour cream |
|
|
1 c. bread crumbs |
|
|
1/4c. sliced mushrooms |
|
|
1/2 c. chopped green pepper |
|
|
1 lb. sliced mozzarella cheese, |
|
|
1 large can of cottage cheese |
|
|
1/2 c. grated Parmesan cheese |
|
|
2 tsp. basil |
|
|
3 beaten eggs |

Mix spinach with cheese, bread, crumbs, eggs, mushrooms, and green pepper |
|
|
Grease a large cooking pan, preheat the oven at 350°F and then put the above mixture in the pan and cover with sour cream |
|
|
Pour 1/4 c of spaghetti sauce and keep the rest, sprinkle some chopped of mozzarella cheese on the surface and top with the remaining spaghetti sauce |
|
|
Leave in the oven for half an hour and then serve hot |
