Bacon Bread


Bacon Bread is usually served in large dinner meals and in the New Year festivals in some parts of Austria with green salad or as a secondary dish beside the Bacon.

1/4 kg sliced diced bacon,  
3 c. bread flour  
1/2 stick unsalted butter  
1/2 c. warm water  
1 package active dry yeast  
3/4c. milk  
2 large eggs  
1 tsp. salt  
1/2tbsp. sugar

Combine sugar and water and yeast and set aside for 4 minutes to rise
Heat milk and butter heavily
Put half of the flour in a large deep bowl and make a hole in the center and put the yeast mixture and milk and butter mixture in the hole and stir well to make dough or till the flour turns into a thick batter.
Beat eggs and add some salt and pour it over the dough and then add the remaining amount of flour and stir well
Remove the dough from the pan and place on a flat floured surface and kneed well for 15 minutes or until smooth and shiny
Wrap in a plastic bag and put in the refrigerator for 60 m.
Remove from the refrigerator and knead it for more 5 minutes and then set aside throughout the night to rest
In the next day, butter two backing sheets and divide the dough into two parts and roll with rolling pin to make it circular in shape and then
Place in the greased sheets and cover with damp piece of cloth for 15 m. to rest
Back in the center of a preheated oven on medium heat till golden and then brush the surface with fats resulted from the simmering of the bacon and then set aside to cool and serve with green salad
