Avocado Salad
This simple salad comes from the Cuban cuisine.

 |
4 medium avocados, peeled and sliced into wedges |
|
 |
1 small red onion, peeled and sliced into thin rings |
|
 |
2 to 3 tbsp. olive oil |
|
 |
salt to taste |
|
 |
4 to 6 large lettuce leaves (such as romaine, rinsed and |
|
 |
patted dry) |

Arrange the lettuce leaves on a serving platter. |

 |
Spread avocados wedges on top of the bed of lettuce. |
|
 |
Top wedges with onion rings. |
|
 |
Prepare topping by blending olive oil and vinegar in a small mixing bowl. |

 |
Sprinkle with salt and olive oil mixture. Serve. |
