Stuffed and Baked Artichokes

6-8 artichokes |

1 tablespoon finely chopped parsley |
|

2 finely chopped onions, salt and pepper |
|
 |
3 peeled and diced tomatoes |
|
 |
1 tablespoon boiled, mashed potatoes |
|

|
These ingredients are used for stuffing the artichokes hearts |

Boil onion in salted water. |

After draining it, add tomatoes and parsley, and palce on fire for about 10 minutes. |

Remove from flame, add mashed potato and seasoning, and blend well. |

 |
Fill artichoke hearts, place in greased oven pan with well-seasoned stock or water and bake in preheated oven for 30 minutes. |
