1 beetroot |

6-8 cups water |

3-4 tablespoons salt |

Wash turnips and beetroot, scrub well, and either slice Of cut into quarters. |

Sprinkle with salt and leave to sweat for 24 hours. |

Boil water with salt and put into pickling jar to cool. |
|
 |
Drain turnips, squeeze gently, and put in pickling jar with the beetroot. |
|
 |
These pickles should be ready after 24 hours. |
