Tamarind is a traditional drink, renowned for the effect of natural cooling it gives.

(1)-Tamarind  
(2)-Sugar to sweeten  
طريقه التحضير
(1)-Place tamarind in cold water for 2/3 hours to cover.
(2)-Move it with its water to a pot and bring to a boil.
(3)-Immediately, get pot away from flame and strain liquid through filter paper or cheesecloth.
(4)-Replace its water with fresh cold water to cover.
(5)-Boil and filter once again.
(6)-Repeat until the brown color of tamarind fades away.
(7)-Put aside dregs and add sugar to taste juice while it is still hot.
(8)-Tamarind perfectly serves as ice-cold drinks on hot summer days.
*Tamarind is available dried and as paste; and both are sold at supermarkets and spice shops.
*Both forms are prepared likewise, but the Tamarind paste requires extra filtering.
