Yogurt Pie


This Greek recipe is a delicious low-fat dessert. It is a popular favorite rich with calcium.

To prepare the pie, you need:  
1/4 c. butter, softened  
1 tsp. cinnamon  
1 1/4c. graham cracker crumbs  
1/4 c. sugar  
To prepare the filling, you need:  
1 tsp. vanilla extract  
3 tbsp. honey  
12 oz. ricotta  
1 1/2 c. plain yogurt

Heat oven at 375°F.
Place sugar, butter, graham cracker crumbs, and cinnamon in a mixing bowl. Mix thoroughly.
Place this mixture in a pie pan. Press gently to distribute mixture evenly.
Place pie pan in oven and bake for 5 to 10 minutes.
When done, remove from oven and allow to cool.
In a separate bowl, beat ricotta with an electric mixer.
Add yogurt little by little, stirring well after each addition.
Add honey and vanilla extract to ricotta-yogurt mixture and stir well.
Pour filling into cooled pie pan.
Place in a refrigerator to chill for at least 24 hours. Serve.
