Yellow Rice with Raisins

1 c. short-grain white rice |

3 c. water |

2 tbsp. sugar |
|

1 tsp. salt |
|
 |
1 tbsp. butter |
|
 |
1 stick cinnamon |
|

1 tsp. turmeric |
|
 |
1/2 c. raisins |
|
 |
1 tsp. lemon zest |

Make a mixture of water, sugar, turmeric, salt, butter, cinnamon, raisins, and lemon zest in a saucepan. Blend well. |

Parboil over high heat. |
