White Rice, Korean Style


People in Korea prefer the short-grain white rice and prepare the most delicious versions of rice dishes with it. They usually serve this dish with barley, millet, corn, beans, or wheat. What they like most in this recipe is that rice becomes tender and a little sticky after absorbing the tangy meat juices and soups.

To prepare 6 cups of this rice, you need:  
2 c. short-grain white rice  
2 2/3 c. water

Place rice in a saucepan with water over high heat. Parboil without a lid.
Simmer for 2 to 3 minutes then cover.
Lower heat to low and cook for 20 to 25 minutes.
When all water is absorbed, remove rice from heat.
Let stand, covered, for 10 minutes.
Fluff with a fork then serve hot.
