Whipped Cream Cake


This layer cake is a popular favorite throughout Norway. It is usually prepared at most festive celebrations and holidays.

To prepare pastry, you need:  
1 c. flour  
1 tsp. vanilla extract  
4 large beaten eggs  
1 c. sugar  
1 tsp. baking powder  
To prepare filling, you need:  
1 qt. fresh strawberries  
1 tsp. vanilla extract  
1 to 2 c. heavy whipping cream  
2 tbsp. powdered sugar

Place beaten eggs in a bowl. Add sugar little by little, stirring very well after each addition.
Keep beating until mixture thickens.
Add vanilla extract.
Heat oven at 350°F.
Spray round cake pans with nonstick cooking spray.
Mix the flour and baking powder in a separate bowl. Stir thoroughly.
Fold dry ingredients into the egg mixture and blend.
Pour mixture into the pans with the cooking spray.
Spread batter evenly.
Place pans in oven and bake for 25 to 30 minutes.
When done, remove from the oven. Allow to cool.
When cooled, remove the cakes from the pans.
Meanwhile, start making the filling.
Beat the cream with an electric mixer to whip.
Add sugar and vanilla extract to whipped cream.
Place one cake on a serving plate with its brown side down and its flat side top.
Sprinkle the bottom layer of the cake with some fruit juice.
Top with half the portion of the whipped cream then sprinkle with strawberries.
Top with the second layer of cake so that the brown side down and its flat side top.
Sprinkle this layer with a little fruit juice.
Top with other half of the whipped cream then sprinkle with strawberries.
Allow to chill in a refrigerator for 2 hours, then serve.
