Victoria Sandwich


المقادير
Cake:  
2 beaten eggs  
1 c. plus 2 tbsp. flour  
2 tsp. baking powder  
1/2 c. margarine or butter  
1/2 c. superfine sugar  
Flavoring:  
3 tbsp. cocoa  
milk

Prepare flavoring by placing 3 tbsp. cocoa in a cup mixed with enough water or milk to make a stiff paste.
Start making cake by beating margarine with sugar in a large bowl until mixture is light.
Mix the flour with the baking powder in a separate bowl.
Add beaten eggs and flour mixture little by little to margarine-sugar mixture. Mix thoroughly and constantly.
Heat oven at 375°F.
Stir in flavoring into the batter. Blend very well.
Grease cake pans, the lightly dust its bottom and sides with flour.
Place equal amounts of batter into each pan. Unfold batter evenly with a spatula.
Place pans in oven and bake in the middle to upper part of the oven for 20 minutes.
Remove from the oven when edges of cake stick no more to the sides of pans.
Set aside to cool for 10 minutes (in the pans), then transfer onto a wire racks to finish cooling.
Cut into slices evenly and serve.
When spreading batter into the cake pan, make the center a little lower than the sides because the center always rises more.
