Vermicelli Soup


المقادير
2 tsp. vegetable oil  
3 tbsp. tomato purée  
5 c. beef or vegetable broth  
1/2 c. vermicelli noodles, uncooked  
1/2 c. onion  
1/2 c. Monterey Jack cheese, grated  
You can substitute Monterey Jack cheese with white cheddar cheese.
طريقه التحضير
Break vermicelli noodles into small pieces.
Fry noodles in a skillet with heated oil over medium heat.
When noodles are light brown, remove from heat.
Chop the onion finely. Add to the skillet and sauté until soft.
Add tomato purée and simmer for 2 to 3 minutes, keeping the stir.
In a large pan, mix noodles, broth, and purée.
Cook for 6 to 8 minutes, or until noodles are tender.
Add seasoning. Place in serving soup bowls.
Garnish with cheese and serve hot.
