Vegetable Biryani


المقادير
1 peeled and minced fresh gingerroot,  
1 c. thawed green peas,  
1 c. green beans  
5 c. water  
3 chopped tomatoes,  
2 chopped carrots,  
2 sliced onions,  
6 crushed cardamom pods,  
2 peeled and chopped potatoes,  
2tbsp minced fresh mint leaves  
1/2 c. dried lentils  
6 whole cloves  
1 small cinnamon stick  
1 tsp. turmeric  
2 c. white rice  
1 tsp. cayenne pepper  
10 minced garlic clove,  
1 tsp. salt  
2 tbsp. canola oil  
طريقه التحضير
Stir onion slices in preheated oil for 5 minutes till tender and then remove in a small bowl and let to cool
Put the ginger, garlic, and cayenne pepper in the cooking pan and stir frequently for 5 minutes and then add peas, carrots, green beans and lentils and stir well
Lower the heat and leave the mixture after adding suitable amount of water till boiling
Put the tomatoes, cinnamon, cardamom, turmeric, and mint to
Dutch oven and combine well and then leave for 3 minutes
Put the rice salt and the remaining amount of water and leave for 15 minutes or till the rice is cooked and then serve hot.
