Twig Cookies


These lovely twig cookies are served as a special sweet in "name days", in Russia. Days of the Russian Orthodox calendar is connected to a holy man. Russians celebrate on the day they share its saint's name with.

To make 3 to 4 dozen cookies, you need:  
2 1/2 c. flour  
2 egg yolks  
1 egg  
1/4 c. whipping cream  
1/2 tsp. vanilla extract  
flavoring  
5 tsp. water  
1/8 tsp. salt  
1/2 c. powdered sugar  
vegetable oil

Make a mixture of flour, egg, vanilla, egg yolks, whipping cream, flavoring, and water in a large mixing bowl. Mix thoroughly until dough forms.
Add salt and desired amount of powdered sugar.
Lightly dust flour on a flat smooth surface (such as a tabletop).
Place dough onto the surface and knead until smooth and pliable.
Divide dough into two parts evenly and place one of them back onto bowl. Cover with a towel.
Roll the part on surface with a rolling pin.
Cut rolled dough into strips 5-inches long and 2 inches wide.
Shred a 2-inch slit from the center toward one end of each strip. Now, thread the other end through the slit and twist slightly.
Follow same steps until all strips are done. Repeat all steps with other dough kept in bowl.
Place a frying pan with oil at 365°F.
Fry 3 twists of dough at a time.
When fried, place on paper towels to drain from oil.
Transfer cookies onto a platter and garnish with a sprinkle of powdered sugar. Serve.
