Turkish Coffe


There are four adjectives usually describe coffee and they indicate the quantity of sugar one boils with the coffee: 1-Sada (`plain` or without sugar). 2-Ar-rilw (with the scent),means 1/2 teaspoon or less of sugar. 3-Mazbut (or just right), means equal quantities of sugar and coffee. 4-Ziyada (or in excess), means 2 teaspoons of sugar to a teaspoon of coffee.

For each cup of water, you need:  
1 teaspoon grinded Turkish coffee,  
sugar to sweeten

Place a coffe pot with water over flame.
Put coffee and sugar then stir with a teaspoon.
Get the pot away from flame once foam of coffee rises.
Pour in coffee cups at once.
*If you need to Prepare 3 or more cups at one time, you need to use the above steps with a big coffe pot.
*If you prefer flavored turkish coffe, you need to buy flavored ground coffee with cardamom, and add a pinch of mastic or powdered dry orange rind.
*To serve, avoid shaking to make sure you obtain and preserve all the foam.
*To make sure each cup has foam, use a teaspoon to carry the foam and distribute it among the cups and don`t forget to pour coffee slowly on the side of each cup.
