Tripe, with Mixed Vegetables

1 kg tripe |

3-4 zucchini, cut into very tiny pieces |

1 cup shelled peas |

1/2 cup celery, chopped |

 |
2-3 diced carrots |
|
 |
Salt and black pepper |
|
 |
1-2 diced potatoes |

Slit tripe into narrow strips (about 1-2 ems wide and 3-5 cms long), bring to a boil for 3-5 minutes, then discard water. |

Return to flame, add all other ingredients, cook over very slow fire until tender, with enough water to just cover, and add small amounts of warm water when needed. |
