Traditional Leg of Lamb with White Beans


المقادير
1/2 kg dried white beans  
4 chopped onions  
2 peeled and seeded tomatoes  
2 tbsp. thyme  
1 kg leg of lamb  
7 cloves garlic  
1 minced garlic clove  
1 tbsp. margarine or butter  
1 tbsp. margarine  
Salt to taste  
1 tbsp. chopped parsley  
10 c. water

Cover the beans in water and bring to boil on high fire for 20 minutes and then remove
Stir onion till tender in preheated oil and then add beans minced garlic clove, tomatoes, and thyme
Add 2 cups of water and let the mixture to simmer for an hour with stirring from time to time
Strain meat and pat dry and prepare to roast by putting sliced garlic cloves in the center and make some halls in the sides placing some garlic slices in it
Season with salt and any flavorful seasoning and roast for 50 minutes
Sprinkle some dipping on the surface of the leg to remove the crust on the surface
When both the leg of lamb and the beans are done, arrange the beans in a serving dish and garnish with parsley and butter and then serve with the lamb.
