Thai Coconut Custard


المقادير
1/4 c. white sugar  
1 c. coconut milk  
1 c. winter squash  
4 eggs  
1/4 c. brown sugar  
You can substitute winter squash with butternut, buttercup squash or pumpkin.
طريقه التحضير
Granulate white sugar.
Cut winter squash into thin slices. Scoop inedible seeds, pits, and rind.
Heat oven at 350°F.
Use a whisk to beat eggs thoroughly in a deep bowl.
Add brown and white sugars. Mix thoroughly.
Add coconut milk and squash and stir well until dissolved.
Pour mixture into a 9-inch baking pan then place in preheated oven.
Bake coconut custard for about 45 to 50 minutes.
When done, a knife or toothpick inserted into the center of the flan should come out nearly clean.
Serve in plates at room temperature.
